Hi Veenaa
I have just tried the eggless sugar cookies and the dough seemed perfect and I chilled it in the fridge and measured as per the recipe however once I cut out my cookies and lay them on the tray to bake all just spread apart, powdered sugar is referred to as icing sugar in South Africa, this is the only thing that I had to adapt to ensure I follow your recipe, so two trays that I made was just spoilt no shape and quite sweet, so the remainder of the dough I cut into shapes and put them back in the fridge, I hope if I bake them tomorrow they hold, the recipe is very tasty, prefer little less sugar especially as I want to put royal icing on them. they are Abit chewy however need them to be Abit harder and crunchie to compliment the egg free royal icing, please do let me know what else I can do to improve!
I need to get this right so that I can try your chocolate ones ☺️
Ereshini. These cookies are usually very popular because they do not spread, so I'm surprised. Was the butter too soft when you started to cream? You can gently knead in a few tablespoons of flour to help stabilize it. Next time. you can reduce a few tablespoons of powdered sugar with flour to make them less sweet.
Hey Rhonda. Pound cakes are supposed to be dense but they can be moist as well. Alternatively, you can moisten them with simple syrup. You can try using my vanilla pound cake which has milk added to keep it moist. Also, my butter pound cake has less flour than most others to keep it moist. Hope this helps.
Hello,
I m in love with your site. And have learned so much. I am trying to start a mobile bakery in the city or fancy markets that are outdoors. I am working ooon my baking portfolio. I used the Italian Butter cream. It was the most Delicious frosting ever. Made the coconut cake , fabulous. Chocolate cake just came out of the oven. Smells lovely. Thank you. For all you share. Thank you, Sandy. I am so happy you are enjoying my recipes. All the best with your new business venture. Sounds exciting. Must be stressful too, I'm sure. Don't forget to have fun.
Your site is so insightful and helpful! I'm going to make a Chase (Paw Patrol character) cake for my son's birthday. I have a ready silicon mold for the cake. How do I go about decorating the cake? I'm not a professional just a home baker. I want to use buttercream frosting for decorating. Any tips would be really helpful.
Thank you.
Indira. Not sure what mold you have but you can trace the different parts of the mold with buttercream. Pipe different colors so they stand out. Check with the manufacturer's instructions what is the best way to decorate the cake.
You can cover a cake with whipped cream over the ganache. Whipped cream is lighter so yes, it's possible but why do you want to put more whipped cream over ganache?
You will need to be very careful when working with chocolate and white. The whipped cream will get easily smeared.

Can I use fondant over buttercream?
Veena Azmanov
Yes, of course, Amy. Fondant over buttercream is very common.

Hi veena,
Can I decorate a cake with whipped cream after I've covered it with ganache? Or should I cover it with whipped cream?
Thanks a lot
