Pretty Petal Ruffles on the bottom of this cake make a grand presentation with a feminine touch. Perfect for any girl, six or sixty. This simple and easy technique is quite time-consuming as it involves making countless petals that are then scrunched into a ruffle-like appearance with a huge wow factor.

Is it summer where you are already? Well, we have summer and I mean summer. Summer for me as a cake decorator here in the middle east is a nightmare. They are filled with buttercream but the frosting outside is only ganache!! And that's ganache made with a 3:1 ratio of chocolate to cream.
The good thing is that cake orders are less in summer. You know, who wants to get married in this heat, so while many people come here on vacation I find my cake orders are less. Having said that both my kids have birthdays in summer May/June. So I definitely do a few cakes.
Have you seen the video for this cake? At the end of the video you see the cake sweating.... yes, that is summer humidity here with the air conditioning on!!

About this cake
- Bottom Tier - Chocolate mud cake with velvet American buttercream and dark chocolate ganache
- Middle Tier - Vanilla cream cake with Vanilla buttercream and white chocolate ganache
- Top Tier - Simple moist chocolate cake with velvet American buttercream and milk chocolate ganache

Top tier
- The top tier is covered with fondant but you can add the onlay directly to the cake as well. In summer I cover all my cakes with fondant first so that helps with condensation in this humidity. Or else ganache can make a big mess when working with fondant.
- I added CMC to my fondant when using the onlay. The sequins mold is from Marvelous Molds
The middle tier
- A fairly simple and elegant cake with just the name plaque. Here, I have again used the sequins mold but if you find more creative plaques in a previous tutorial I share on how to make fondant plaques and name tags for cakes.
- I use a plaque cutter and a rose spray silicon mold similar to this to finish the design.
- I then brushed them all with a metallic silver finish. Note - most metallic colors are non-toxic but still not edible and these need to be discussed with the customer at the time of cake consultations. You can read more about it here on my post - How to create metallic effects on cakes.
Bottom tier
- This is a tier that takes the most time and resources. Not only is it big in size and all but the petals do take a heck of a long time to make. I lost count after the first three hours and I really think I like petals in thousands.
- I used a mix of 50/50 for the petal ruffles, and I let the ruffles dry for 15 minutes.
- Because of the high humidity, I found the ruffles were still quite soft. If I had to do these ruffles again in summer I would use all gumpaste and I would leave them to dry longer. So depending on the weather you may want to take that into consideration.
It was all worth it
it's always great to hear from the customer later on. This was just one of the compliments she sent me for feedback. And you can tell that all my hard work and hours of petal ruffles were totally paid off.

Bottom Cake
