Winter is almost upon us and apples are in abundance. So, why not make some warm pumpkin spice caramel apple dessert? And, top it with a delicious scoop of vanilla ice cream for that ultimate comfort food. Serve this on a cold weekend or entertain with family and friends. With or without ice cream this dessert is an absolute treat that gets done in less than 20 minutes.

Is it getting cooler where you are? We have hot days but cooler evenings. It's amazing how the weather changes so much from one week to the next. Just last weekend we had a little picnic on the beach. Ah well, that's the weather, unpredictable.
One of our favorite treats in winter is this warm pumpkin spiced caramel apple dessert. You can have it cold of course but I prefer it warm with a dollop of ice cream. Absolute heaven. Just like eating a warm brownie with cold ice cream. Apples are not only plenty in winter but affordable too so this is a fairly inexpensive dessert to make. The best part? It gets done in less than 20 minutes.

Ingredients and substitutes
- Sugar - I am using white here so I can get pretty amber color - a dark sugar will give a very dark caramel color. But both would work.
- Cream - The quantity of cream is almost half of what we usually use in caramel. But we do not want the caramel to be too runny or it won't set.
- Apples - I actually like using granny smith but I could only find gala. If you can; use granny smith as they are tart which works great with the sweet caramel and they soften but still can hold their shape.
- Lemon - Just a little lemon will help cut the sweetness it this dessert.
- Pumpkin Spice - If you don't have pumpkin spice use cinnamon powder and a dash of freshly grated nutmeg. I use my homemade pumpkin spice which is super simple, you probably already have the spices in your pantry to make this blend.

Step by step instructions (pin)
- Place sugar, spice mix, and butter in a deep dish saucepan or skillet
- Let cook on medium shaking the pan to assist even cooking.

- Once all the sugar is dissolved reduce the heat to a minimum to prevent burning.
- The sugar will start to caramelize into a light amber color.
- Assist even cooking by gently shaking the pan.
- Once you reach a light amber color add in the chopped apples, lemon, and a pinch of salt.
- Continue to cook on low heat letting the apple release their juices and soften

- You want the apples to cook and become soft and tender so they melt in the mouth.
- And you want some of the juice to evaporate so the caramel will not be too runny.
- Continue to cook for two more minutes letting it thicken.
- Add cream and continue to thicken some more carefully.

- Remove from heat and set aside to cool until just warm.
- Cool until just warm or room temperature.
- Spoon some in a serving dish and vanilla top ice cream
- Serve at room temperature.

I believe you left out the butter on step 1. We tried making this and wound up with burnt sugar bark!

Hey Amy, Sorry about that. Must have missed it in the recipe card. Though, even without the butter, you can caramelize the sugar, similar to making caramel. You just need to cook on medium to low heat. In this recipe, you can add the butter later as well.
