These Christmas tree cupcakes, baked in an ice cream cone, can be a fun way to get kids excited about Christmas. These cupcakes are simple and easy to make as well as cute and fun to eat. Perfect to take with you for the kids’ Christmas theme party. Make them festive with holiday flavors such as eggnog or peppermint and frost them with my five-minute buttercream frosting recipe.

I made these cupcakes for Aadi’s basketball team after their game. The deal is that every time they have a game one kid’s parent brings snacks and drinks for the kids of both teams so the kids can get to know each other and realize that it’s just a game.

It was my turn this time and since Christmas is not celebrated here Aadi is always out to show everyone that he celebrates Christmas. I made these Christmas tree cupcakes in an ice cream cone. The excitement was fun to watch. Some of the kids never heard about Christmas which is always very surprising to Aadi and he loves talking about it. I think the kids were most fascinated about Santa and the mysterious Christmas gifts that just appear under the tree on Christmas morning.

Anyway, these cupcakes definitely did the job they were set out to do – getting the kids all excited about Christmas. In fact, I even heard some kids say they were going to write to Santa asking if he’d be kind to send gifts to Jewish boys though they don’t celebrate Christmas.

About these cupcakes

These cupcakes are moist delicious and easier than you can imagine. The recipe is my one bowl cupcake recipe which means you can make these in vanilla or chocolate. Below I have given you my one-bowl recipe for chocolate cupcakes but you can use my recipe vanilla cupcakes recipe as well.

I had to make 36 cupcakes so I made three batches – chocolate, vanilla, and strawberry. The buttercream frosting is my Vanilla buttercream frosting with green food gel color. The frosting takes 5 minutes to make and the cupcakes took a little as 20 minutes to bake.

I used a large star piping tip and frosted these in as little as 10 minutes. As you can see it’s just a little swirl that looks like ice cream. The best star piping tip for this swirl would a large open star tip. A big one means you pipe fewer circles and it is easier.

If you want to add a Christmas flavor to the cupcakes add other flavors like peppermint, cherry or eggnog. In fact, you can even make my eggnog cupcake recipe for this. The buttercream again does not have to be vanilla, you can use eggnog buttercream and tint it green. It can also be mint or any flavor you fancy. Since I was giving these to kids I thought I’d keep them simple so everyone gets a cupcake without complaining.

How to transport ice-cream Cone cupcakes

I placed my ice cream cone cupcakes in a cupcake box, guess what? For one, I can’t close the box but they don’t stand straight either. They keep falling over because the cones are tall and the little gap for the cupcakes are too short. I didn’t have any time to go buy new boxes and I wasn’t sure they make special boxes for ice cream cone cupcakes. Considering I had to drive an hour with these cupcakes place them in a box unsupported would mean disaster.

How to store Ice Cream Cone Cupcakes

Ziv finally found a solution for me. He took a few paper cups. These are cheaper when you buy them in bulk and they were easy to find. He cut an X at the bottom of each and just place the ice cream cone cupcake in that gap. They traveled well and didn’t move at all in the big box.

Step by step instructions

Prepare cupcakes

  • Preheat the oven at 170 C / 340 F.
  • You can place the ice cream cones in a muffin pan but I just placed them in a baking tray.
  • Ensure all cupcake ingredients are at room temperature.
  • Place all ingredients in a bowl – use a whisk or mixer to combine to a smooth consistency
  • Use an ice cream scooper and divide the batter between 12 ice cream cones
  • Bake them in the preheated oven for 18 to 20 minutes, or until a skewer inserted comes clean
  • When baked cooked completely.

Prepare buttercream

  • In a large bowl with a whisk or mixer and cream the butter for a minute
  • Add salt, fresh cream and vanilla – mix a minute longer, until well combined
  • Now add the powder sugar 1 cup at a time.
  • Once all the powder sugar has been incorporated
  • Continue to mix on medium-high for 2 to 3 minutes more until you have a light and fluffy buttercream.
  • The cream in the mixture will whip and give you almost stiff peaks.
  • Add just enough green food gel color to get a pretty Christmas tree color

Assemble

  • Place buttercream in the piping bag with a star tip nozzle.
  • Pipe an ice cream swirl on the top of each cone cupcake
  • Top with sprinkles and a little dragee or star on the tip of each swirl to look like a decorated tree.

Buttercream

  • 1 cup (227 g) Butter (unsalted, room temperature)
  • 3 cups (360 g) Powdered sugar
  • ¼ cup (60 g) Fresh cream
  • ½ tsp Salt
  • 1 tbsp Vanilla

Extra

  • 12 Ice cream cones (flat bottom)
  • 3 to 4 drops of green food gel color.
  • 2 tbsp Sprinkles (to decorate)
  • 12 Dragees or mini stars (for the treetops)
